Phase 2 and 3

  • 1 egg yolk and 2 egg whites
  • 2 cups of spinach leaves
  • 1 large apple chopped into small squares
  • A few sundried tomatoes (phase 3 only)
  • 2 Melba mini toast, broken into squares
  • 1 Table spoon apple cider vinegar
  • 1 Table spoon squeezed lime juice
  • 1tsp salt
  • 1 tsp garlic seasoning
  • Other seasoning if desired

Hard Boil the eggs (remove the yolk from 2 of them)

Place spinach leave, sundried tomatoes, apple squares and melba mini toast into a bowl

Slice the eggs into halves and place in the salad bowl

In a jug mix together the apple cider vinegar, the lime juice and all seasoning, then pour mixture over the salad
