Serves 1

Ingredients:

  • 2 cups Vegetable stock in water
  • 1/2 cups Red Lentils
  • 1 Onions (diced)
  • 1/2 bunch Kale (remove stem and roughly chop)
  • 1/ clove Garlic
  • 1 tsp Red Pepper Flakes
  • 1 TBS Parsley chopped
  • 1/2 Lemon Juice

 

Directions:

Add the veggie stock, lentils, onions, kale and garlic to a large pot

Bring to the boil and let cook until the lentils are tender (about 15-20 minutes)

Stir in the red pepper flakes, parsley and lemon juice

Serve and enjoy
